Baked Sushi Cups with Shrimp

INGREDIENTS

  • 1 package peeled and pre-cooked shrimp
  • 3 nori sheets
  • 120 g cream cheese
  • 3 tbsp mayonnaise
  • 1 tsp sriracha (hot sauce)*
  • 1 tbsp soy sauce
  • A little salt

For the shrimp:

  • 40 g mayonnaise
  • 1 tsp sriracha*
  • 1/2 tsp honey

For serving:

  • A little finely chopped chives

*You can substitute sriracha with ketchup if you don’t like spicy flavors.

METHOD

Thaw the shrimp, drain them well, and pat dry with paper towels. Add a little salt, mix, and set aside.
In a bowl, mix together the cream cheese, mayonnaise, sriracha, and soy sauce. Add this sauce to the shrimp and mix very well. Set aside.
Cut the nori sheets into quarters and press 2–3 tablespoons of cooked rice on top of each piece. Carefully place them into muffin tins, gently pressing them to form cups. Then divide the shrimp mixture on top.
Bake in a preheated oven at 200°C (about 390°F) for approximately 15 minutes, until the shrimp are lightly golden on the outside.
Meanwhile, prepare the spicy mayonnaise by mixing the mayonnaise, sriracha, and honey until smooth.
Serve the sushi cups with a drizzle of spicy mayonnaise and a sprinkle of finely chopped chives.
