METHOD
In a small pot, cook the peppers and the garlic for 5 minutes. Add the vinegar, the water, and the agave syrup and simmer for 30 – 40 minutes.
Blend the sauce with a hand blender and remove from the heat.
Cook the tempura shrimp in the air fryer at 200°C for 16 minutes.
Cut the mango into sticks and place on a plate. On top add the peanuts, the cherry tomatoes, the shrimp, the chili sauce, lime zest, chopped fresh coriander, and… enjoy!
