INGREDIENTS

  • 1 pack tempura shrimps “7 THALASSES”
  • 1 ripe mango
  • 20 g peanuts
  • 10 cherry tomatoes
  • 40 ml olive oil
  • A little fresh coriander & zest of 1 lime
  • For the sweet chili sauce:
  • 2 Florina peppers
  • 1 garlic clove
  • 140 ml water
  • 60 g vinegar
  • 100 g maple syrup or agave syrup or honey
  • A little chili flakes

METHOD

In a small pot, cook the peppers and the garlic for 5 minutes. Add the vinegar, the water, and the agave syrup and simmer for 30 – 40 minutes.
Blend the sauce with a hand blender and remove from the heat.
Cook the tempura shrimp in the air fryer at 200°C for 16 minutes.
Cut the mango into sticks and place on a plate. On top add the peanuts, the cherry tomatoes, the shrimp, the chili sauce, lime zest, chopped fresh coriander, and… enjoy!
