INGREDIENTS
- 425 g pack 7 THALASSES shrimp
- 3 Tbsp olive oil
- 1 red pepper cut into sticks
- 1 green pepper cut into sticks
- 1 yellow pepper cut into sticks
- 1 orange pepper cut into sticks
- 1 large onion cut into rings
- 1 tsp sweet paprika
- ½ tsp smoked paprika
- 1 bunch fresh coriander
- 1 ripe avocado (half for the sauce and half to garnish)
- 12 cherry tomatoes
- 1 lime
- salt & pepper
For the avocado sauce
- ½ avocado
- 150 g strained yogurt (2% fat)
- 80 ml water
- juice of half a lemon
- 1 tsp honey or agave nectar
