INGREDIENTS

  • 425 g pack 7 THALASSES shrimp
  • 3 Tbsp olive oil
  • 1 red pepper cut into sticks
  • 1 green pepper cut into sticks
  • 1 yellow pepper cut into sticks
  • 1 orange pepper cut into sticks
  • 1 large onion cut into rings
  • 1 tsp sweet paprika
  • ½ tsp smoked paprika
  • 1 bunch fresh coriander
  • 1 ripe avocado (half for the sauce and half to garnish)
  • 12 cherry tomatoes
  • 1 lime
  • salt & pepper

For the avocado sauce

  • ½ avocado
  • 150 g strained yogurt (2% fat)
  • 80 ml water
  • juice of half a lemon
  • 1 tsp honey or agave nectar

METHOD

Marinate the shrimp with 1 tsp olive oil, salt, pepper, and the smoked and sweet paprika, and set aside. Sauté the peppers and onion in 2 Tbsp olive oil. Add the spices and stir for about 15 minutes until soft.

Push the peppers and onion to the edge of the pan with a spatula, add the shrimp and cook for about 2 minutes on either side. Mix together all the ingredients and serve in wholemeal tortillas with a diameter of about 20 cm.

Whizz together all the sauce ingredients with a hand blender until smooth. Add 3 halved tomatoes to each taco, a little avocado, coriander, lime zest and juice, and 2 Tbsp avocado sauce
