INGREDIENTS

For the Marinade:

  • 1 pack of 7 THALASSES Argentine red shrimp
  • 1 tbsp olive oil
  • ½ tsp sweet paprika
  • ¾ tsp dried basil
  • ¾ tsp garlic powder
  • Salt and pepper

For the BBQ Sauce:

  • 130 g brown sugar
  • 160 g ketchup
  • 45 ml apple cider vinegar
  • ½ tbsp mustard
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and pepper, to taste

For the Herb Yogurt Sauce:

  • 200 g Greek strained yogurt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp mustard
  • 1 tbsp finely chopped fresh herbs (dill and parsley)
  • 1 tsp honey
  • Salt and pepper (optional

For the Skewers:

  • 1 red bell pepper
  • 1 green bell pepper
  • 1 orange bell pepper
  • 1 onion
  • A little olive oil
  • ¾ tsp dried oregano
  • A pinch of salt
  • Cherry tomatoes
  • Wooden skewers, soaked in water to prevent burning during grilling

METHOD

Thaw the prawns, remove the shells from the bodies, and devein them.
Add the olive oil, paprika, basil, garlic powder, salt, and pepper to the prawns. Mix well and leave them to marinate while preparing the vegetables.

For the BBQ Sauce
Place all the ingredients in a small saucepan and cook over low to medium heat, whisking continuously until the sugar dissolves and the sauce thickens.
Transfer the sauce to a bowl and, once cooled, refrigerate until ready to serve.

For the Herb Yogurt Sauce
Combine all the ingredients in a bowl and mix well. Refrigerate until ready to serve.
Wash and cut the vegetables into pieces of similar size.
Add the olive oil, oregano, and a little salt to the vegetables and toss well.

Thread the vegetables, prawns, and cherry tomatoes onto the skewers, alternating the ingredients. Avoid packing them too tightly, leaving a little space between each piece to allow even cooking.
Grill the skewers over high heat on a barbecue grill or grill pan for a few minutes, turning them occasionally, until the prawns are cooked through and the vegetables are slightly tender.

Serve the shrimp skewers hot, accompanied by the BBQ sauce and the herb yogurt sauce..
